Ready to take your baking skills to the next level? In this advanced pastry camp, teens will explore the techniques used in real bakeries and pastry kitchens while working with enriched doughs, specialty batters, custards, and overnight fermented breads. This camp is designed for students who enjoy baking and are ready to move beyond the basics while building confidence with more advanced pastry techniques. Menu Day 1: Strawberry Matcha Financiers, Cardamom Bun Dough (prepared for next day) Day 2: Cardamom Buns Orange-Cardamom Syrup Glaze, Sweet Focaccia Dough (prepared for next day) Day 3: Brown Butter Peach Focaccia &Honey Glaze Finish, Vanilla Bean Whipped Cream, Chocolate Madeleines Day 4: Mini Basque Cheesecakes, Classic Crème Brûlée Notes: This is an advanced level baking camp designed for teens who enjoy working in the kitchen and are ready to build more technical pastry skills. Students will work with enriched doughs, custards, and specialty batters while learning professional bakery techniques throughout the week. Summer Camp: Summer camp fees are non-refundable. With four weeks’ notice, fees may be transferred to a future class. If unforeseen facility closures occur, a full credit will be issued.

Cancellation Policy We want every class and camp to be a wonderful experience! Because ingredients and supplies are purchased in advance, we’re not able to offer refunds. If you need to make a change, class exchanges are available with at least 3 days’ notice. Unfortunately, no credits or exchanges can be made within 3 days of the class. Camp registrations are non-refundable and non-transferable. On the rare occasion that Meraki needs to cancel or reschedule, we’ll notify you right away and arrange a new date.
